Ingredients

1 Hour
2 people, 4 dinners
  1. 1/2 poundlamb liver, sliced thin, veins removed, about 12 slices, optional soak in milk overnight if you prefer a milder lamb flavor
  2. 1/4 cuporzo
  3. 1red onion, quartered
  4. 1tomato, quartered
  5. 1carrot, sliced in thin discs
  6. 1green poblano pepper, seeds removed, sliced
  7. 1fresh farm egg, beaten
  8. 1 Tspchopped mint, dried or fresh
  9. 1 Tspchopped cilantro, dried or fresh
  10. 1 Tspchopped lovage dried or fresh
  11. 1 Tspchopped oregano, dried or fresh
  12. 4 cupschicken broth
  13. 4 cupswater
  14. Sprinkle salt, paprika powder and pepper to taste
  15. Equipment: cast iron dutch oven with lid
  16. Cost: liver $2, vegetables $2, broth, other $2, 4 dinners, $1.50 each

  1. 1

    Bring onion, tomato, poblano pepper, orzo and carrot ingredients to a slow boil with thin liver slices in cups of chicken broth and water. Turn to simmer and taste.

    When the white orzo kernels start floating to the top, add herbs, garlic, and simmer 15 more minutes.

    Taste piece of liver and vegetable ingredients, for tenderness. Add beaten egg to broth in soup, stir, serve.
