Ingredients

20 minutes
4 servings
  • 1 cupmethi leaves chopped finely
  • 2 tbspcoriander chopped finely
  • 3-4green chillies chopped finely
  • 1 inchginger grated
  • 1/4th tsp coriander seeds half crushed
  • 1/4 th tspblack pepper half crushed
  • 1/4 tspajwain
  • 2 tspsesame seeds
  • 1/2 cupgramflour (besan)
  • 3 tbsprice flour
  • 2 tspfine semolina
  • 1 tbspcornflour
  • 1/4 tspturmeric powder
  • 1/4 tspred chilli powder
  • To taste salt
  • 1/2 tspsugar
  • 1/4 tspbaking soda
  • 2 tbsphot oil for batter
  • 1/2 cupoil for frying
  • As neededwater to make a thick batter
  • 1 tsplemon juice

Steps

    Clean, wash thoroughly, drain water and chop the methi leaves finely discarding the stems.Add chickpea flour/ besan, rice flour, sooji, cornflour, grated ginger, half crushed coriander seeds, black peppercorns, ajwain,sesame seeds,chopped coriander, green chillies,turmeric, red chilli powder, salt and sugar to taste.Mix all well and add hot oil.Now add water gradually to form a thick batter.Whisk and make sure there are no lumps.

    When the fritters are ready for frying, add baking soda and sqeeze lemon juice over it. Squeeze out all moisture from the chopped methi leaves.Add in the prepared batter and give it a nice mix.

    Heat oil in a deep frying pan. Once the oil is hot enough, reduce flame to medium heat. Drop small balls in oil.Fry them on medium heat until golden brown and crispy on all sides.Remove them on paper towel.Fry few slit green chillies.

    Methi Na Gota or Pakoda is ready.Serve them hot with fried green chillies, tomato sauce or tamarind or green chutney and savour the flavours of fresh methi leaves fritters with a cup of tea or coffee.
