Heat a cooking pot over high heat.

Lower the heat and pour in olive oil, garlic, onions and ginger, and coriander.

Add salt, pepper, caraway, all spices, and black pepper.

Fry until the garlic starts to brownish and the onions become translucent.

Add the vermicelli and fry for one minute.

Add the chopped vegetables and start mixing all ingredients for one minute.

Add the vegetable stock and 2 liters of water.

Cover the pot and bring the soup to a boil.

Remove the cover and lower the heat

Let the soup simmer for 20 to 30 minutes.

Adjust the seasonings and salt then turn off the heat.

Add a quarter cup of squeezed lemon.
