Mix the softened butter with the sugar, then add the 2 whole eggs, almond flour, pistachio flour, cornstarch, Amaretto, and pistachio paste. Stir until you have a thick, smooth cream.

Unroll the first sheet of puff pastry onto a baking sheet lined with parchment paper.

Spread the pistachio cream over the pastry, leaving a 3/4-inch (2 cm) border. Place the raspberries on top, and add the fève (small charm or bean, optional).

Brush the edge of the pastry with water using a pastry brush. Place the second sheet of pastry on top and gently press the edges together to seal.

Cut a small hole in the center to let steam escape. Use the tip of a knife to create decorative stripes on the galette.

Brush with the egg yolk, then bake in a 350°F (180°C) oven for about 40 minutes.
