Pastel goreng

In Indonesia pastel refer to pie of crust made of thin pastry filled with meat (usually chicken, i prefer minced pork) mixed with vegetables (chopped carrot and peas), rice vermicelli and sometimes egg, then deep fried in vegetable oil. Practice, practice and practice until the result is 😋. My mother made this in our childhood. The missing ingredient for me is her love for her family🥰

Add the salt to the flour and mix it. Add the butter, oil and mix it slowly. Add little by little cold water to the flour. Until the dough is not too dry or too wet. Knead the dough for about 10 minutes. Put the dough in the refrigerator to rest.

Put the rice vermicelli in boiled water for about 2,5 minutes. Rinse with cold water. Cut it small with a scissor. Chop the shallots, garlic.

Heath 2,5 tablespoons oil and add the shallots and garlic for until it will not be raw.

Add the minced meat to the garlic and shallots. After the meat is not raw anymore more, add the stock powder, oyster sauce, kecap manis, sesame oil, ketoembar, djinten, nutmeg and sugar to the meat. Mix it well and add the carrot to it. Add a little water to it and close the pan for about 2 minutes. Put off the heat. Add the peas and soen and mix it all together. Add 6 tablespoons of bawang goreng.

Take a small part from the dough and knead it. Use sufficient flour otherwise it will be sticky. But not too much otherwise your frying oil will get dirty. Use a rolling pin and make rounds of about 12 cm. Add the filling, make the edges a little wet as glue but not necessary. You can also twist the edges.

Heath the oil and fry the pastel gold. Move the pastel in the hot oil, otherwise it will be quickly burn and the dough is still raw inside. Enjoy 😊
