Ingredients

60 minutes
Serves 3 servings
  1. 14 ozsweet potato (about 400 grams)
  2. 1 2/3 cupsmilk (about 400 ml) + 1 1/4 cups heavy cream (about 300 ml), 5 tablespoons butter (about 70 grams)
  3. 1garlic clove
  4. To taste: salt, pepper, herbes de Provence

    Peel the sweet potatoes and slice them thinly.

    Sauté the slices for 15 minutes in a large skillet with the milk and 3 tablespoons butter (about 40 grams).

    Drain the sweet potatoes, then rub a baking dish with the garlic clove. Arrange the sweet potatoes in the dish, pour in the cream, add the remaining butter, and bake for 45 minutes at 350°F (180°C).
