Mullet is an affordable fish, and when freshly caught, it can be even tastier than farmed sea bass. Here’s a simple recipe to enjoy it at its best.

Slice the onion and lemon, then add them to the water along with the peppercorns and bay leaf.

When the water boils, add the fish. Simmer gently for 15 minutes. Carefully remove the fish and separate the flesh.

Serve warm, drizzled with a little olive oil, lemon juice, and a sprinkle of chili powder.

(You can also freeze the fish flesh, but thaw it very gently.)
