Ingredients

45 minutes
Serves 4 servings
  • 3/4 cupsorghum flour (90 g)
  • 3/4 cupoat flour (90 g)
  • 2/3 cupcornstarch (70 g)
  • 1small zucchini (make sure it's not too watery)
  • 10.5-14 ozbittersweet baking chocolate (300 to 400 g)
  • 1/2 cupunrefined light brown sugar (100 g)
  • 1 tablespoonbutter, ghee, or neutral oil
  • 3 1/2 tablespoonsyogurt (50 mL)
  • 1/4 cuprice milk or other plant-based milk (60 mL)
  • 2 teaspoonsbaking soda (10 g)
  • 1 teaspoonguar gum (5 g)
  • 2 tablespoonsapple cider vinegar
  • 1 tablespoonflax seeds
  • Pinchflaky sea salt
  • For decoration: almonds, 3.5 oz chocolate (100 g), flaky sea salt

Steps

  1. 1

    In a glass, mix the yogurt, plant-based milk, and vinegar. Let sit for 10 minutes.

    In a large bowl, combine the flours, salt, baking soda, guar gum, and sugar.

  3. 3

    Melt the chocolate and butter together.

  4. 4

    Grate the zucchini and cut it into pieces. Place in a blender bowl.

  5. 5

    Add the yogurt-milk-vinegar mixture and flax seeds to the blender, then blend.

  6. 6

    Add the melted chocolate and blend again.

  7. 7

    Gradually add about 1/4 of the flour mixture and blend.

  8. 8

    Pour the blender mixture along the edge of the flour bowl and gently fold in the flour until combined.

  9. 9

    Taste: If it's not chocolatey enough, add 1 to 2 tablespoons cocoa powder and more sugar if needed.

  10. 10

    Bake for 35 minutes at 350°F (180°C) in a preheated oven. If needed, bake longer (check with a knife; it may take time to rise).

  11. 11

    Melt the 3.5 oz chocolate and fill any holes formed during baking. Sprinkle the cracks with flaky sea salt and chopped almonds.
