Bhajipav in pressure cooker

In a bowl combine ingredients for paste combine well and keep aside.

Prepare vegetables. No need to grate the carrot. I was using the leftover carrot.

Heat oil and butter in a pressure cooker. Fry onions till translucent. Add capsicum and fry for a minute. Add the paste and fry till oil oozes well.

Add peas, flower and potatoes. Combine very well. Next add the tomatoes and combine well. Add 1 cup of water, close the cooker and allow 2 whistles on medium to high flame. Let the cooker cool down.

Transfer the bhaji in a pan over flame. Mash using a masher till the mixture looks smooth.

Adjust spices. Add 1 tsp bhaji pau masala. Combine well. Add 1 cup of hot water. Cover and simmer till oil oozes on the surface.

Slit buns. Add 1 tbsp of oil/butter in a pan. Add 1 tsp of bhaji and a few leaves of coriendar leaves. When the oil is hot enough, place and lightly press the bun over oil in a way that the oil gets absorbed evenly in the entire bun, inside and outside. Fry all around and serve immediately.
