Golden, Crispy Cheese Gougères

Pour the water into a saucepan, add the teaspoon of salt, and bring to a boil. Add the butter, cut into pieces, and stir until completely melted.

Remove from heat and add all the flour at once. Stir vigorously until the dough is smooth and uniform.

Return the pan to low heat and cook the dough for one minute, stirring constantly to dry it out slightly.

Let the dough cool. It's important that the dough is warm, not hot, before continuing.

Crack one egg into a bowl and beat until well mixed. Add the egg to the dough, mixing vigorously until fully incorporated. Repeat this step for each egg.

Add the shredded cheese to the dough and mix until evenly combined.

Preheat the oven to 400°F (200°C). While the oven heats, use two tablespoons to form small balls of dough and place them on a baking sheet lined with parchment paper, spacing them apart.

Once the oven is hot, bake the gougères for 25 minutes. Do not open the oven during baking to ensure the gougères puff up properly.

Start checking the gougères around 20 minutes to make sure they are puffed and golden before removing them from the oven.
