Ingredients

30 minutes prep + 15 minutes cooking
Serves 4 servings
  • 2.2 lbsfresh spinach or (1.1 lbs frozen spinach) (1 kg fresh or 500 grams frozen)
  • 1/2 cupgrated cheese (about 50 grams)
  • 1 clovegarlic, finely minced
  • 1mix of fresh herbs (rosemary, sage, oregano, thyme, basil, parsley, ginger)
  • 1egg
  • 4 tablespoonsbreadcrumbs
  • 1 tablespoonextra virgin olive oil
  • Salt and pepper, to taste

Steps

30 minutes prep + 15 minutes cooking
  1. 1

    Finely chop all the fresh herbs along with the garlic (just a few sprigs and leaves of each). Sauté the spinach in a skillet with salt, pepper, and 1 tablespoon of extra virgin olive oil for 10 minutes. Let cool. Combine everything in a bowl to make a soft, even mixture.

    Shape the mixture into small patties or croquettes as you like. Place them on a baking sheet or, if you have one, cook them in an air fryer for 15 minutes at 350°F (180°C). Remove from the oven, let cool slightly, and serve. They’re also delicious served cold as an appetizer.
