Red Hot Garlic tomato sauce

#hmi Aromatic flavorful and healthy garlic sauce is prepared with the hottest chili pepper “Ghost” from Rajasthan. Ghost chili peepers are from our kitchen garden. If you do not like the sauce too hot, you may use chili peppers with less heat. The recipe includes tomatoes to enhance the flavor, healthy nutrients and color.

Prepare a checklist, keep all ingredients within reach.
Peel the garlic. - 2
Over medium high heat boil 1c of water. Add red chilies, continue boiling for a couple of minutes. Turn off the heat. Let the chilies soak for 10-15 minutes.

Place all ingredients except oil, salt and spice blend in a mixie jar. Add the soaked chilies. Puree.

Heat ¼ c oil in a saucepan over medium heat for a few seconds. Add the puree. Bring it to boil. Keep stirring now and then. Puree thickens to form a sauce. Sauce separates from the oil. Add the remaining oil. Salt to taste. Stir in the spices. Sauce is ready. Turn off the heat.

Transfer the sauce to a serving bowl. You may serve the sauce with rice, dosai, idli, chapathi, parantha and etc. I spreaded a tablespoon of sauce on the top of dosa. It tasted spicy hot and divine.
