Ingredients

20-30 mins
8-10 servings
  • 1/2extra virgin olive oil
  • 1/4 conion, chopped
  • 1whole garlic
  • 10dried red chilies
  • 1 ctomato, chopped
  • 1 tbspginger, peeled, chopped
  • 1green chile
  • 1 ts Italian spice blend
  • Salt to taste
  • Garlic sauce, side dish

Steps

    Prepare a checklist, keep all ingredients within reach.
    Peel the garlic.

    Over medium high heat boil 1c of water. Add red chilies, continue boiling for a couple of minutes. Turn off the heat. Let the chilies soak for 10-15 minutes.

    Place all ingredients except oil, salt and spice blend in a mixie jar. Add the soaked chilies. Puree.

    Heat ¼ c oil in a saucepan over medium heat for a few seconds. Add the puree. Bring it to boil. Keep stirring now and then. Puree thickens to form a sauce. Sauce separates from the oil. Add the remaining oil. Salt to taste. Stir in the spices. Sauce is ready. Turn off the heat.

    Transfer the sauce to a serving bowl. You may serve the sauce with rice, dosai, idli, chapathi, parantha and etc. I spreaded a tablespoon of sauce on the top of dosa. It tasted spicy hot and divine.
