I often made this when I lived in Paris. Just simmer simple ingredients. It pairs well with bread and wine, or you can serve it with brown rice.

Cut the onion and carrot into about 1/4 inch pieces, and the bacon into about 1/2 inch cubes. Rinse the lentils in a colander.

In a pot, add olive oil, minced garlic, and bacon, and lightly sauté.

Add the onion and carrot, and sauté until the onion becomes soft and translucent, being careful not to burn it.

Add the lentils and mix briefly, then add enough water to cover by about 3/4 inch, along with the consommé, bay leaf, salt, and a little pepper. Bring to a boil.

Once boiling, reduce to low heat, slightly cover with a lid, and simmer for about 20 minutes. Add more water to cover by about 3/4 inch again, and simmer for another 30 minutes until done.

A large quantity can be made, so you can halve the ingredients if needed. If you have a large pot, you can make plenty of soup.
