Combine the ● sauce ingredients.
* Use water + a pinch of Japanese dashi powder. - 2
Cut the chicken breast into thirds lengthwise, then slice diagonally.
* For extra tenderness, pound the meat with the back of a knife or a bottle. - 3
Massage the ◆ marinade into the chicken.

Coat with all-purpose flour.
* Use a different bag for the marinade and flour for best results. - 5
Heat oil in a frying pan and brown both sides of the chicken.
* It's okay if it's not fully cooked through yet. - 6
Add the ● sauce and simmer over medium-high heat until it thickens.
* Occasionally shake the pan or turn the chicken with a spatula. - 7
Finish when the sauce is glossy and slightly reduced.
Serve with vegetables of your choice.
Mayonnaise is a must.
