Ingredients

Serves 2-3 servings
  1. 1 piece(about 10 1/2 oz) chicken breast
  2. 1tablespoon, a pinch ◆ sake, salt
  3. To taste ◆ grated garlic, ginger
  4. 2 tablespoonsor more all-purpose flour
  5. As neededvegetable oil
  6. 1 1/2 tablespoonseach ● sugar, soy sauce
  7. Just under 1 tablespoon each ● sake, mirin
  8. 1generous 1 tablespoon ● rice vinegar
  9. 1generous 2 tablespoons ● dashi stock
  10. To taste (for garnish) mayonnaise, green onions, sesame seeds, etc
  11. Whatever you have (for serving) shredded cabbage, sliced new onions

Cooking Instructions

    Combine the ● sauce ingredients.
    * Use water + a pinch of Japanese dashi powder.

    Cut the chicken breast into thirds lengthwise, then slice diagonally.
    * For extra tenderness, pound the meat with the back of a knife or a bottle.

    Massage the ◆ marinade into the chicken.

    Coat with all-purpose flour.
    * Use a different bag for the marinade and flour for best results.

    Heat oil in a frying pan and brown both sides of the chicken.
    * It's okay if it's not fully cooked through yet.

    Add the ● sauce and simmer over medium-high heat until it thickens.
    * Occasionally shake the pan or turn the chicken with a spatula.
