Ingredients

10 servings
  • 11 ozdried chickpeas, sorted, rinsed, and soaked overnight
  • 11 ozdried fava beans, sorted, rinsed, and soaked overnight
  • 1 bunchparsley, chopped
  • 3green onions, finely chopped
  • 1 tspcayenne
  • 1.25 tspground coriander
  • 6garlic cloves, crushed with 1 tsp salt
  • 1.25 tspbaking powder
  • 1 tbspsalt
  • 1at veggie oil, or as needed for frying
  • 1 tbspcumin

Steps

  1. 1

    Drain the soaked beans. Rinse and dry them.

  2. 2

    In a food processor, blend the beans, parsley, onions, cayenne, cumin, coriander, garlic, baking powder, and salt together in batches until the mixture is homogeneous

  3. 3

    Form the mixture into balls of 1-1.5 in diameter and slightly flatten them

  4. 4

    Heat the oil up to 350 F and deep fry for 4 mins

  5. 5

    Remove and drain briefly on towels. Serve immediately.
