Honestly, it doesn't even cost 30 cents. With udon noodles at just 16 yen per serving, a little creativity makes them incredibly delicious! So good, even noodle makers would be jealous.
About this recipe:
I created this dish out of a deep craving for my favorite Ise Udon! It's a recipe from the heart. The best part is how easy it is—you can make it for breakfast, lunch, or even a midnight snack as long as you have udon noodles. If you have a little extra in your budget, add an egg for an excellent touch! This dish will transport your heart straight to Ise-Shima.

Ingredients

Serves 1 serving
  1. 1serving udon noodles (any inexpensive kind is fine)
  2. 1 tablespoonsoy sauce
  3. 1 tablespoonmirin
  4. 1/2 tablespoonsugar (granulated)
  5. 1 tablespoonwater
  6. 1 pinchJapanese-style dashi powder (granules)
  7. 1 teaspoonJapanese-style dashi powder (granules), for boiling udon
  8. Optional: chopped green onions, shredded kelp, or bonito flakes, as desired

Cooking Instructions

  1. 1

Boil the udon noodles in water with 1 teaspoon dashi powder over medium heat for 4–5 minutes.

  2. 2

The noodles will get thick—don’t worry, that’s how they should be!

  3. 3

While the noodles are boiling, combine all the ingredients marked with ★ (soy sauce, mirin, sugar, water, and a pinch of dashi powder) in a microwave-safe bowl and microwave for 40 seconds at 600W.

  4. 4

Pour the sauce over the cooked udon and mix well. Let it sit for a moment so the noodles absorb the sauce and turn a nice color.

  5. 5

Top with green onions, nori, tempura flakes, or shredded kelp if you like. I love shredded kelp!
