Cooking Instructions

Boil the udon noodles in water with 1 teaspoon dashi powder over medium heat for 4–5 minutes.

The noodles will get thick—don’t worry, that’s how they should be!

While the noodles are boiling, combine all the ingredients marked with ★ (soy sauce, mirin, sugar, water, and a pinch of dashi powder) in a microwave-safe bowl and microwave for 40 seconds at 600W.

Pour the sauce over the cooked udon and mix well. Let it sit for a moment so the noodles absorb the sauce and turn a nice color.

Top with green onions, nori, tempura flakes, or shredded kelp if you like. I love shredded kelp!
