In a large pot, combine all the [Basic Broth] ingredients and bring to a simmer. If using dried wood ear mushrooms, soak them in warm water to rehydrate first.

Once the broth comes to a boil, add the pork and gently separate the slices as they cook.

When the pork is cooked through, turn off the heat. Push the pork to the side, cut the other toppings into bite-sized pieces, and arrange them nicely in the pot.

Cover and cook over medium heat until the broth increases and the vegetables are tender.

Uncover, pour in the [Add-in Broth] ingredients, stir gently, and bring to a simmer. Finish by adding the [Finishing Garnishes] and your choice of toppings. Enjoy!

This time, I topped it with chashu pork, marinated eggs, and menma—classic ramen toppings. Gyoza, pickled ginger, or roasted seaweed are also great additions!

Tonkotsu soy sauce broth is perfect for ramen! Use your favorite noodles, but I recommend thick Chinese-style noodles cooked just until tender.
