Recipe Background
I've made all kinds of hot pots, but I always thought it was impossible to recreate a pork bone (tonkotsu) broth at home. After lots of trial and error, I finally found this combination of common seasonings that tastes just like tonkotsu—without using pork bones! I'm really proud of this recipe, so please give it a try!

Cooking Instructions
- 1
In a large pot, combine all the [Basic Broth] ingredients and bring to a simmer. If using dried wood ear mushrooms, soak them in warm water to rehydrate first.
- 2
Once the broth comes to a boil, add the pork and gently separate the slices as they cook.
- 3
When the pork is cooked through, turn off the heat. Push the pork to the side, cut the other toppings into bite-sized pieces, and arrange them nicely in the pot.
- 4
Cover and cook over medium heat until the broth increases and the vegetables are tender.
- 5
Uncover, pour in the [Add-in Broth] ingredients, stir gently, and bring to a simmer. Finish by adding the [Finishing Garnishes] and your choice of toppings. Enjoy!
- 6
This time, I topped it with chashu pork, marinated eggs, and menma—classic ramen toppings. Gyoza, pickled ginger, or roasted seaweed are also great additions!
- 7
Tonkotsu soy sauce broth is perfect for ramen! Use your favorite noodles, but I recommend thick Chinese-style noodles cooked just until tender.

It's been 4 years since I started making homemade ramen as a hobby. Recently, I've finally been able to come close to my ideal flavors, so I uploaded the recipe here as a note to myself. The noodles here are low in moisture and very hard. I think they would be very hard to roll out without a pasta machine or noodle-making machine. If you are going to roll them out by hand, add 100 to 200 g of water to the amounts given. That is the ratio I used to use when I used to roll my noodles out by hand. Recipe by Homard Ebiko cookpad.japan -

Hokkaido-style Soy Sauce Ramen Soup Concentrate Hokkaido-style Soy Sauce Ramen Soup Concentrate
My go-to ramen is the soy sauce ramen served at Hisaya, a ramen restaurant in Rumai, a city in Hokkaido.I created the miso ramen recipe first, but actually whenever I eat ramen myself, I choose soy sauce ramen. I've been thinking about a soup base that is made in the same way as a miso soup base. This is a basic soup, so you can make your own variations by adding stir-fried garlic, ginger, honey and so on.Since it has dashi stock, you only need to dilute with hot water to enjoy it as a soup.A secret trick of ramen restaurants is to add the noodle cooking water to the soup base. Some people don't like the other richer version of this recipe… this one also has less calories. This recipe uses gyoza dumpling skins instead of covering with an otoshibuta/drop lid. If you add the gyoza dumpling skins at Step 6, you'll end up with two different textures of cabbage to enjoy. If you add at Atep 7, it will be more of a sweet, rich flavor. The gyoza dumpling skins also helps keep the hot pot hot. For 2 servings. Recipe by Annchann cookpad.japan -

Homemade Tonkotsu Ramen Broth and Noodles from Scratch Homemade Tonkotsu Ramen Broth and Noodles from Scratch
I wanted to recreate the taste of the ramen served at a ramen shop I frequent. It took me about 10 hours from start to finish. How about trying this on your day off?I recommend you try this when you have plenty of time on your hands. It'll also smell quite strong while you're still in the middle of the process, but stay strong and be patient. If you end up with leftover noodles, you can wrap it up in a couple of plastic bags and it'll keep for about 3 days. Pork bones aren't usually displayed at the butchers, but they'll probably bring some out for you if you ask them. Go to a store you can trust! Recipe by Hirapan cookpad.japan -
