Ingredients

  • 1chicken, halved
  • 3 cupsbasmati rice, rinsed
  • 1large onion, diced
  • 2 clovesgarlic, minced
  • 1 teaspoongrated ginger
  • 1 tablespoonchicken spices
  • 3cardamom pods
  • 2dried black limes
  • 3cloves
  • 1small cinnamon stick
  • Grated carrots
  • Food coloring, as desired
  • 7 cupswater for cooking rice
  • 2chicken bouillon cubes

Steps

    First, boil the water with the chicken bouillon cubes, one cardamom pod, cloves, and cinnamon stick. Add the rice and let it boil, then reduce the heat and simmer for 5 minutes.

    Meanwhile, in a pot, heat a tablespoon of oil and sauté the onion. Add the garlic, ginger, remaining whole spices, and dried limes. Then add the chicken and stir until it changes color. Add the carrots, a teaspoon of salt, and chicken spices. Stir over low heat until the rice absorbs half of the water.

    Add the rice, which is three-quarters cooked, with its water to the chicken to finish cooking together. Let it cook for about 15 minutes on low heat.

    Mix a drop of food coloring with a tablespoon of water and sprinkle it over the cooked white rice. Fluff with a fork to avoid clumping and serve. Enjoy!
