Easy Creamed Spinach and Chicken
A classic creamy dish that's rich and delicious! Enjoy plenty of spinach with juicy, tender chicken thighs. The origin of this recipe: I harvested a large amount of spinach. Feel free to visit me on Facebook!
Cooking Instructions

Blanch the spinach briefly and cut into 2-inch pieces. Slice the onion thickly. Cut the bacon into 1-inch wide strips.

Poke holes in the chicken thigh with a meat tenderizer or fork, cut into bite-sized pieces, and place in a bowl. Season with salt and sake.

Melt the butter in a frying pan and cook the chicken skin-side down. Cook for 2 minutes on each side, then cover and cook for an additional 3 minutes until cooked through.

Once the chicken is cooked, move it to the side of the pan and add the garlic to the rendered fat to release its aroma.

Add the onion and bacon, sauté until softened, then sprinkle with bouillon and flour, mixing well.

Once the flour is incorporated, add the milk and spinach. You can increase the amount of milk if desired.

Season with salt and pepper, and once the mixture thickens, it's ready to serve!
