I got a domestic pork shoulder block for about $0.45 per ounce (100g) at a supermarket sale!
It's about 1 1/4 inches (3 cm) thick. Since it's thick, let it sit at room temperature for about 30 minutes.

Score the connective tissue, then pound the meat to tenderize and flatten it. Shape it back to its original form.
The top piece is after pounding, the bottom is after reshaping.

Season both sides with salt and pepper. Sprinkle with garlic powder if you like.

Mix the egg, milk or water, flour, and vegetable oil well to make the batter mixture.

Dip the meat in the batter mixture, then coat with panko breadcrumbs.

Fry in a shallow amount of oil (enough to come halfway up the meat).
Cook over medium-low heat for 3 minutes per side. Remove and let rest for 3 minutes to finish cooking with residual heat.

Increase the heat to high and fry again until golden brown and crispy.
Let it rest a bit before slicing to help keep the coating from falling off.
