Place the edamame in a bowl and rinse under running water.

Trim both ends of the edamame pods with scissors.

Bring a pot of water to a boil. Once boiling, add 1 star anise and 1 tablespoon salt, then add the edamame. Cover and boil for 10 minutes.

Heat oil in a skillet. Add the remaining 2 star anise and dried red chili peppers, and sauté until fragrant.

Add the minced garlic and boiled edamame to the skillet. Stir-fry, adding plenty of black pepper for authentic Taiwanese flavor.

Transfer to a heatproof container. Once cooled, refrigerate for 2 hours to enhance the flavor.
