I wanted to get a taste of Yamanashi at home since I couldn't travel there, and the local grocery store didn't have houtou noodles, so I decided to make them myself.

I wanted to get a taste of Yamanashi at home since I couldn't travel there, and the local grocery store didn't have houtou noodles, so I decided to make them myself.

Mix the water and salt until the salt dissolves.

Add about half of the salted water to the flour and mix.

Gradually add the rest of the salted water to the flour, mixing each time, until there are no dry spots. Transfer the dough to a work surface.

Knead the dough by pressing and folding it for about 3 minutes. (Since the dough is a bit dry, press and fold rather than stretch and knead.)

Once the dough is smooth, wrap it in plastic wrap and let it rest for about 30 minutes.

Dust the dough with cornstarch and roll it out to about 7 x 12 inches (18 x 30 cm).

Cut the rolled dough into 1/2-inch (1 cm) wide strips.
