Ingredients

  • 1 lbKielbasa, or Andouille sausage, cut in rounds
  • Canola Oil, for searing
  • 1 lbchicken breast, diced
  • 1/2 cred bell peppers, julienne
  • 1/2 cgreen bell peppers, julienne
  • 1/2 cyellow bell peppers, julienne
  • 1/2 ccelery, diced
  • 1 ccarrots, small diced
  • 3garlic cloves, slivered
  • Splashwhite wine
  • 3 TFlour
  • 3 cchicken stock
  • 1 cjicama, small diced
  • 1 lbkidney beans, rinsed
  • 2 Tcilantro, chopped
  • 1 tsavoy, crumbled
  • 1/2 cgreen onions, chopped
  • 5 tchili flakes or hot sauce

    Take a Dutch oven and place it on high heat with the canola oil.

  2. 2

    To the hot oil, add the sausage, chicken, and cook 50%.

  3. 3

    Next, add all the belle peppers, onions, garlic, celery, carrots, and cook until browned, about 5 minutes constantly stirring around.

  4. 4

    Deglaze the pan with a splash of white wine, add the flour and stir until combined.

  5. 5

    Add the chicken stock, jicama, and the remainder of the ingredients except the green onions. Cover with a lid and turn the heat down to low. Cook for 45 minutes or until the vegetables are cooked thoroughly.

  6. 6

    Plate and serve with a side of rice. Sprinkle with green onions and enjoy!

i have an older dutch oven, that was intended jor use directly over top of hot coals, therefore it has legs and can't be used on a stovetop. how should i cook it: in a stainless pot, or over hot coals with the dutch oven
