I simply love zucchini! I especially enjoy zucchini with a bit of crunch, so I created this recipe to highlight that texture.

Slice the zucchini into rounds about 1/2 inch thick. Crush the garlic cloves with the side of a knife. Break the chili pepper and remove the seeds.

Mix the marinade ingredients (balsamic vinegar, garlic soy sauce, wine vinegar) together.

In a large frying pan, heat olive oil and lightly sauté the garlic and chili pepper. Arrange the zucchini slices in the pan and fry on both sides over medium-high heat until golden brown.

Once browned, turn off the heat and pour in the prepared marinade sauce. Taste and add a little salt if desired!

Flip the zucchini occasionally to coat with the sauce. Once cooled, transfer to a container and refrigerate. (Flip again during refrigeration.)

If you like, grind some black pepper over the zucchini before serving.

● We always have garlic soy sauce at home. If you don't have it, regular soy sauce is fine.
