This is one of the few ways I enjoy eating eggs, and it's super tasty!
Steps

Wash the potatoes, onion, cilantro, and parsley.

Peel and dice the potatoes into small cubes, then fry them in a little oil, stirring often to prevent sticking.

Finely chop the onion, cilantro, parsley, and a small piece of white chili pepper.

When the potatoes are almost done, add the onion, chili pepper, cilantro, and parsley to sauté together.

While the potatoes finish cooking, beat the eggs with a fork and add the salt.

Taste a piece of potato; if it's soft, add it to the eggs and mix well.

In a skillet over medium heat (preferably nonstick) with a little oil, pour in some of the mixture. Let it cook on one side for about 2 minutes, then use a spatula to flip and cook the other side. Enjoy!
