Heat the sesame oil in a wok over medium-low heat. Sauté the garlic and green onion until fragrant.

Add the carrot, enoki mushrooms, and shiitake mushrooms. Stir-fry lightly.

Add the remaining toppings, then add all the sauce ingredients except the potato starch and water mixture. Taste and adjust seasoning, cover, and simmer until the vegetables are tender.

Dissolve the potato starch in water. Turn off the heat, stir the mixture into the pan, then return to heat and cook until the sauce thickens.

Pour the sauce over cooked noodles and serve.
