Ingredients

Serves 3–4 servings
  • Sauce
  • 4 cupswater (about 950 ml)
  • 1 1/2 tablespoonssesame oil (about 22 ml)
  • 3-4 tablespoonssoy sauce (about 45–60 ml)
  • 1-2 teaspoonssalt (about 5–10 ml)
  • 1 teaspoonsugar (about 4 grams)
  • 1-2dried red chili peppers
  • 5 tablespoonspotato starch (about 40 grams)
  • 8-9 tablespoonswater (for dissolving potato starch) (about 120–135 ml)
  • Toppings
  • 5-6baby corn (canned, cut in half)
  • 1/3carrot (julienned)
  • 1 bunchenoki mushrooms (cut in half)
  • 1 handful(or 1–2 pieces) dried shiitake mushrooms (or fresh shiitake, sliced)
  • 1green onion (thinly sliced)
  • Wood ear mushrooms (canned, as needed)
  • 1 clovegarlic (julienned)
  • Noodles
  • About 10–12 oz spaghetti (about 300–350 grams)

Steps

  1. 1

    Heat the sesame oil in a wok over medium-low heat. Sauté the garlic and green onion until fragrant.

  2. 2

    Add the carrot, enoki mushrooms, and shiitake mushrooms. Stir-fry lightly.

  3. 3

    Add the remaining toppings, then add all the sauce ingredients except the potato starch and water mixture. Taste and adjust seasoning, cover, and simmer until the vegetables are tender.

  4. 4

    Dissolve the potato starch in water. Turn off the heat, stir the mixture into the pan, then return to heat and cook until the sauce thickens.

  5. 5

    Pour the sauce over cooked noodles and serve.
