Mix the egg, soy milk, sugar, and mirin together.

Gently mix in the pancake mix until just combined.

Let the batter rest for about 10 minutes.

Preheat an electric griddle to 340°F (170°C). Spoon the batter onto the griddle to make circles about 2 1/2 inches (6 cm) wide.

While the pancakes are cooking, divide the sweet red bean paste into 10 portions and roll into balls.

Flatten each ball. Press with the bottom of a glass to make a neat circle.

Prepare 10 slices of butter.

Place a slice of butter on each portion of bean paste. Press it in gently if you like.

Once the pancakes are cooked, let them cool. When cooled, sandwich the bean paste and butter between two pancakes and wrap in plastic wrap.

Remove the plastic wrap and your dorayaki should look perfect!
