Cornbread Casserole

There was this Italian Restaurant in Lower Manhattan that made great Polenta over Sausage and Peppers. I love polenta, but you have to stir it a lot to make. I decided to try a short cut and came up with this idea. Not as creamy as that old restaurant, but still very good. Another crowd favorite in my large and picky family.

Basically, this can be made with any meat and vegetable combination. In the future, I plan on making it over Chicken & Broccoli. So far, I have made it over Chicken & Peppers and Sausage & Peppers(Twice). For the picture, I made it over Sausage &Peppers.

I hope that you enjoy it as much as I did. The only negative to this dish is when it is over. :-(

Ingredients

4-6 servings
  • 1 PoundSweet Italian Sausage
  • 2Medium sized Peppers, sliced
  • 1Large Onion, diced
  • 2 clovesGarlic, diced
  • to tasteGround Black Pepper
  • 2 TspGround Oregano
  • 1 TspGround Basil
  • 1 BoxJiffy Corn Muffin Mix or use my own cornbread recipe

Steps

  1. 1

    Put the broiler on in your oven. Cook the Italian Sausage 7 minutes on each other. When done, let it cool and slice it up into one inch pieces.

    In a medium pot over medium heat, add olive oil to the pot. Put Garlic into the pot and brown up the pieces.

  3. 3

    When the garlic is browned, add the onions. Cook the Onions until they are slightly translucent.

  4. 4

    Next, add the peppers to the pot. When the peppers are tender, add sausage to the pot. Cook everything together for 5 minutes. After 5 minutes, set the Sausage & Peppers to the side to cool.

    Preheat the oven to 400 Degrees.

    Grease a 13x9 Casserole Dish, then add the Sausage & Peppers.

    Mix the Jiffy Corn Muffin according to the box. Pour the mixture over the Sausage & Peppers, then spread the mixture over the Sausage & Peppers.

    Place the Casserole Dish into the oven and cook for 20-30 minutes. Dip a toothpick into the cornbread mixture and if it comes out clean, then it is ready.

    Serve and Enjoy!

Since I was a kid, I remember sitting in the kitchen to watch and/or help my parents. As I grew up, I decided to try their recipes and experiment with different recipes. Some were very good and I re-make them all of the time. Others? Yeah, I never tried them again. All of the recipes that I post are the very good ones.Also, while growing up, my pops suffered from high blood pressure, so my mom stopped adding sodium. Since that is how I was raised, all of the dishes that I post do not have any extra sodium added to it. A lot of friends and family who try my recipes, either do not notice nor miss it. But in no way am I saying not to add salt if you use my recipes. If you want to add it, then go for it.In closing, I hope that you enjoy my recipes. If you use any, then please post pictures. Enjoy!
