If using garlic chives or green onions, cut them into 3/4-inch (about 2 cm) pieces.

Quickly boil the ramen noodles in hot water to remove any excess starch or kansui (alkaline flavor).

Heat a small amount of oil (not listed in ingredients) in a frying pan and cook the ground meat. If using sliced pork, lightly coat it with potato starch before cooking.

When the meat changes color, add the kimchi hot pot soup base and water. Once it comes to a boil, add the bean sprouts and garlic chives (or green onions).

Add the noodles and cheese, and cook until the cheese melts to your liking. You can cover the pan if you like.

Top with black pepper, chili oil, or crunchy chili oil as desired, and enjoy!
