Cut all the ingredients into bite-sized pieces. Separate the shimeji mushrooms. Mix the seasonings together in a bowl. Microwave the udon noodles for 2 minutes to loosen them.

Heat some oil (not listed in ingredients) and garlic in a skillet over medium heat. When fragrant, add the pork and stir-fry.

Add the carrot, then onion, cabbage, and shimeji mushrooms in that order. Season lightly with salt and pepper and stir-fry.

When the onion and cabbage have softened, add the loosened udon noodles and pour in the mixed seasonings. Quickly toss everything together until well combined.

Serve on a plate, top with bonito flakes, and enjoy!
