Rub the oysters with salt and flour, then rinse several times with fresh water. Drain in a colander.

Coat the oysters thoroughly with flour.

Using chopsticks, dip the oysters well in beaten egg.

Press panko breadcrumbs onto the oysters. For small oysters, thread 3 or 4 onto a skewer. Fry in oil at 340°F (170°C) for 3 minutes.
