Poke the chicken several times with a fork. Cut into bite-sized pieces, lightly coat with potato starch, and shake off any excess.

Mix the balsamic vinegar, soy sauce, and honey together. Microwave the sauce for 30 seconds to combine.

Heat oil in a skillet and cook the chicken pieces.

If excess oil appears, blot it with a paper towel. Once the chicken is cooked through, add the prepared sauce and stir to coat the chicken evenly.
