Ingredients: 1 clove garlic -- chopped; 1 each egg -(*see note at bottom); 1 ounce parmesan cheese -- grated; 2 teaspoons balsamic vinegar; 1 teaspoon malt or red wine vinegar; 1 tablespoon lemon juice; 1 teaspoon Dijon mustard; 1 teaspoon anchovy paste; 1/4-1/2 teaspoon salt; 1/4 teaspoon pepper; 8 fluid ounces olive oil; 6 ounces bread- diced 1 inch; 2 ounces butter melted; 1/2 teaspoon oregano; 1/4 teaspoon thyme; 1/4 teaspoon garlic -powder or granulated; 1/4 teaspoon salt; 1/4 teaspoon paprika; 1 head Romaine lettuce -Washed, dried and diced in 1 inch dice; 1/2 cup Parmesan cheese shaved or grated; 6-8 ounces Caesar dressing- add just enough to coat; 2 cups croutons

Ingredients

4-5 servings

1 clovegarlic -- chopped
1each egg -(*see note at bottom)
1 ounceparmesan cheese -- grated
2 teaspoonsbalsamic vinegar

1 teaspoonanchovy paste
1/4-1/2 teaspoonsalt
1/4 teaspoonpepper
8 fluid ouncesolive oil
6 ouncesbread- diced 1 inch
2 ouncesbutter melted
1/2 teaspoonoregano
1/4 teaspoonthyme
1/4 teaspoongarlic -powder or granulated
1/4 teaspoonsalt
1/4 teaspoonpaprika
1 headRomaine lettuce -Washed, dried and diced in 1 inch dice
1/2 cupParmesan cheese shaved or grated
6-8 ouncesCaesar dressing- add just enough to coat
2 cupscroutons

Cooking Instructions

Caesar dressing

Combine the garlic, egg, cheese, vinegar, lemon juice, mustard, anchovies, salt, and pepper in the bowl of a food processor and process for 1 minute.

With the machine running, slowly, begin adding the oil to form an emulsion.about 1 minute slowly pouring

Continue until all of the oil is incorporated. Then let it run for 1 more minute

Toasted Croutons

Dice up french bread into 1 inch pieces and toss with melted butter and seasonings for a minute of mixing so they are fully coated.

Place on a sheet pan and place in the oven at 350 degrees for 10 minutes or until they are Golden Brown and Delicious.

Finished Caesar Salad

To make salad mix just before service the lettuce,cheese,croutons and dressing add just enough to coat. Remember you can always add more dressing you can not take it away. Romaine varies in size so you will not use all of the dressing in one salad. Garnish with cheese on top:)

-The Caesar dressing contains raw eggs. FYI, consumption of raw eggs may increase your risk of food-borne illness.

I've used cashews in place of the egg and oil than would normally be in a Caesar dressing and nutritional yeast instead of parmesan cheese to make this 'Jack friendly' for his sandwiches. It becomes much thicker as it stands so if you need to, thin it down with some extra water but you may need to adjust the other ingredients so the flavour doesn't get watered down too
