It's recommended to use a mix of tripe, but if it's your first time, white tripe (small intestine) is suggested. *If the sliminess bothers you, blanch it lightly before use.

Dissolve all the [Soup] ingredients in a pot, add the bite-sized tripe, and heat over medium.

As it cooks, skim off any scum that appears. Once no more scum appears, turn off the heat. Be careful not to overcook, as it will release the umami.

Cut the cabbage into large pieces about 2 inches wide and arrange them in a donut shape. Pile the bean sprouts high in the center.

Lay the garlic chives, cut into about 3-inch lengths, in a row on top, sprinkle with dried garlic chips, and top with white sesame seeds and sliced red chili peppers.

Turn the heat to high, and as the soup increases, the cabbage will become tender. Once it wilts, it's ready to eat. Reduce to medium heat and enjoy.

For a finishing touch, Chinese noodles are recommended, but you can also add udon or rice to make a delicious porridge with the rich broth.
