I created this recipe to meet all these criteria.

Chop the walnuts and raisins into bite-sized pieces.

Combine the ingredients marked with ★ in a bowl and mix well.

Add water. Adjust so that the mixture is lightly moistened.

Add 1 tablespoon of honey or maple syrup. If the raisins make it sweet enough, adjust accordingly!

Add the coconut oil and mix until the mixture comes together.

Divide the mixture in half to make two flavors. Add cocoa to one half and mix until the powder is fully incorporated.

Use plastic wrap to shape the mixture into balls (you can use your hands, but this way is less messy!).

Line a container with plastic wrap and place the shaped balls inside. Freeze!

Chill time: They start to firm up in 15 minutes, become soft cookies in about 30 minutes, and have a firmer cookie texture in 1 hour.

Note: If the mixture becomes too loose from adding too much water, add a little more oatmeal.
