Peel and shred the sweet potato with a cheese grater so it creates fine thin strips.

Heat some olive oil in a pan, crush and scrape your garlic into the pan to infuse the oil.

Add the shredded sweet potato and stir fry until lightly browned and soft. Should take roughly 5 minutes. Empty the contents of the pan into a large dish and allow to cool.

When the sweet potato is cool add the paprika, cayenne pepper and cumin, along with salt and pepper to taste. Mix altogether with your hands and try to spread the spices evenly.

Crack an egg into the mix and once again mix until spread evenly. This will help the patties bind.

Form as many patties with your hands as you can with the mixture. Place the patties in the fridge and allow to set for an hour or so.

Cook on a medium-high heat on the hub for 4-5 minutes either side until slightly brown and crispy.

Transfer to a bun of your choice with bed of lettuce and tomato to finish.
