Marinate the chicken wings in a mixture of sake, mirin, soy sauce, sugar, ginger, garlic, thyme, bay leaf, dried chili pepper, and vinegar.

Place the chicken wings and marinade in a plastic bag, remove the air, and marinate for 20 minutes. Occasionally turn and gently massage the bag.

Remove the chicken wings and lightly coat them with flour. Transfer the marinade to a frying pan or similar pan for later use.

Fry the chicken wings in an oven with a grill function, without using oil, until crispy.

Simmer the marinade to thicken, then toss the fried chicken wings in the sauce to coat.

Sprinkle with poppy seeds and serve!
