Ingredients

Serves 3 or more
  1. 9or more chicken wings
  2. about 1/2 cup sake (100 ml)
  3. about 1/2 cup mirin (100 ml)
  4. about 1/4 cup soy sauce (50 ml)
  5. 1 tablespoonor more sugar
  6. 10 slicesfresh ginger
  7. 1 clovegarlic
  8. 1/2 teaspoondried thyme
  9. 1bay leaf
  10. 1dried red chili pepper
  11. 1 teaspoonvinegar
  12. 2-3 tablespoonsall-purpose flour
  13. as neededpoppy seeds,

Steps

  1. 1

    Marinate the chicken wings in a mixture of sake, mirin, soy sauce, sugar, ginger, garlic, thyme, bay leaf, dried chili pepper, and vinegar.

    Place the chicken wings and marinade in a plastic bag, remove the air, and marinate for 20 minutes. Occasionally turn and gently massage the bag.

  3. 3

    Remove the chicken wings and lightly coat them with flour. Transfer the marinade to a frying pan or similar pan for later use.

  4. 4

    Fry the chicken wings in an oven with a grill function, without using oil, until crispy.

  5. 5

    Simmer the marinade to thicken, then toss the fried chicken wings in the sauce to coat.

  6. 6

    Sprinkle with poppy seeds and serve!
