Lightly pickle summer vegetables
The story behind this recipe
I received a snake gourd for the first time, and it really looked like a snake, which was a bit creepy. However, it was a soft and refreshing gourd.

Ingredients

Serves 2 to 3 servings
  1. About 8 inches snake gourd
  2. About 7 shiso leaves
  3. 1red chili pepper
  4. 1/2-1 teaspoonsugar
  5. 2 teaspoonsconcentrated white dashi (do not dilute)
  6. 1 pinchsalt
  7. 1 teaspoonvinegar

Cooking Instructions

  1. 1

Here are the ingredients. This time, it's snake gourd. The snake gourd was about 32 inches long.

  2. 2

Peel the snake gourd cleanly and push out the seeds with chopsticks. The area around the seeds is soft, so it becomes hollow easily.

  3. 3

Slice the snake gourd into rings, cut the shiso leaves into thin strips, and slice the red chili pepper into rings and chop finely.

  4. 4

Put the sauce ingredients marked with ☆ into a plastic bag and mix well.

  5. 5

Add the gourd, shiso leaves, and red chili pepper from step 3. Remove the air, and let it marinate in the refrigerator for about 2 hours.

  6. 6

It's ready. It tastes better chilled.
