These crunchy and delicious Jalebis are made out of Idli batter. Just mix in a little bit of colour and you are good to go. You will love the crunch and these are much similar to traditional ones too because of the fermentation that's involved in them. This was my first try at it and they turned out super crisp. Absolutely yummy and delicious to the last bite. Infact these are much crunchier and juicier than the ones made instantly with All Purpose Flour or Maida. Happy Cooking Everyone!

Ingredients

25 minutes
5-6 servings
  1. 2 cupsIdli batter
  2. 2 pinchColour
  3. 1 cupSugar
  4. 1/2 cupWater
  5. 1/2 tspCardamom powder
  6. 4-5Saffron strands
  7. Oil or Ghee for frying as required

Cooking Instructions

    Mix some colour in the Idli batter and you are all set. There is no need to add any other thing. Keep a pan with Ghee or Oil for frying on a low heat.

    Fill the batter in the Jalebi maker or a plastic bag. Make concentric rings of it in a clockwise manner and deep fry few at a time maintaining a constant temperature. Do not do it on a very high heat. Keep the heat on low to medium high only.

    Make a single string consistency Sugar syrup and keep it warm for use. Dip these fried Jalebis in this syrup for a minute or two and spread them on a serving platter. Serve them with Fresh Cream or Rabdi with lots of slivered Almonds and Pistachios sprinkled on top. Or as is without anything. Juicy and crunchy Jalebis are sure to steal your hearts.
