Peel the asparagus lightly with a vegetable peeler. It's easier if you hold it about 2 inches (5 cm) from the top. The photo shows the peeled asparagus.

Trim about 1/2 inch (1 cm) from the base of the asparagus, then cut into 2/3-inch (1.5 cm) pieces. Cut the onions into thin wedges, about 1/8 inch (2–3 mm) thick.

Slice the chicken breast diagonally into 1/4-inch (5 mm) thick pieces, then cut into bite-sized pieces. Season with salt and pepper, then coat with potato starch. Mix the sauce ingredients together in a bowl.

Heat a frying pan and add the vegetable oil. Stir-fry the chicken over medium heat.

When the chicken is about 80% cooked, add the asparagus and continue stir-frying until the asparagus turns a deep green.

Once the asparagus is bright green, add the onions and keep stir-frying.

When the white part of the onions turns semi-transparent, turn off the heat. Pour in the mixed sauce, then return to medium heat and stir everything together.

Once the sauce is evenly distributed, turn off the heat. Adjust the flavor with salt and pepper, and it's ready to serve.
