Wash the rice and soak it for at least 1 hour, then drain.

Chop the herbs after washing and drying them. Add the onions, garlic, and spices. Take everything to the butcher and have them add the ground beef and grind the mixture until very fine.

If grinding at home, first grind the rice in a spice grinder, then mix in the beef, herbs, onions, and garlic. Grind the whole mixture together at least twice.

Knead the mixture well, then shape it into kofta logs as shown.
