Improved Microwave Mug Cake

I love the idea of the microwave mug cake, but the texture tends to be a little off. I tried beating the egg whites to lighten it up and it worked great. Still a bit rubbery, but an improvement imho. I suppose though, at this point, you may be better off making a real cake, haha.

Combine dry ingredients.

Separate egg yolk from white.

Whisk egg white to soft peaks.
- 4
Whisk egg yolk until color pales slightly.
- 5
Whisk dry ingredients, lemon juice, and honey into egg yolk.

Fold in egg whites, mixing gently, just until smooth.

Lightly grease a coffee cup and pour cake batter into cup.

Microwave on high for 2 minutes and 30 seconds.
