Ingredients

Serves 2-4 servings
  1. 1French roll or bolillo, sliced in half lengthwise
  2. Pico de Gallo:
  3. 1/2 cupRoma tomatoes, seeded and chopped
  4. 1 tablespoonfinely chopped white onion
  5. 1/2 tablespoonjalapeño pepper, seeded and chopped
  6. 1 tablespoonchopped cilantro
  7. 1/2 tablespoonfresh lime juice
  8. 1/8 teaspoonkosher salt
  9. Beans:
  10. 1 tablespoonvegetable oil
  11. 1 tablespoonchopped white onion
  12. 1/2 teaspoonchopped garlic
  13. 1 cupcanned refried black beans
  14. 1 link (1 package)(14 oz.) pork or beef chorizo sausage
  15. 1 1/2 cupsshredded quesadilla cheese or Oaxaca cheese
  16. 1/2 cupMexican crema

Steps

  1. 1

    For the pico de gallo: In a small bowl, combine the tomatoes, onion, jalapeño, cilantro, lime juice, and salt. Set aside.

  2. 2

    For the beans: Heat the vegetable oil in a small skillet over medium heat for 2 minutes. Add the onion and sauté for 1 minute. Add the garlic and sauté for 30 seconds. Stir in the refried beans and mix until well combined. Set aside.

  3. 3

    Preheat the oven to 425°F.

  4. 4

    For the chorizo: Heat a small skillet over medium heat for 2 minutes. Add the chorizo, break it up with a spoon, and cook for 10 minutes. Set aside.

    To assemble: Spread half of the beans over each bread half. Place the bread halves cut side up on a baking sheet. Top each half with half of the chorizo. Sprinkle 3/4 cup of cheese over the beans on each half.

  6. 6

    Place the baking sheet in the oven and bake for 8-10 minutes, or until the cheese is melted and lightly golden. Top each mollete with crema and pico de gallo. Serve and enjoy!
