For the pico de gallo: In a small bowl, combine the tomatoes, onion, jalapeño, cilantro, lime juice, and salt. Set aside.

For the beans: Heat the vegetable oil in a small skillet over medium heat for 2 minutes. Add the onion and sauté for 1 minute. Add the garlic and sauté for 30 seconds. Stir in the refried beans and mix until well combined. Set aside.

Preheat the oven to 425°F.

For the chorizo: Heat a small skillet over medium heat for 2 minutes. Add the chorizo, break it up with a spoon, and cook for 10 minutes. Set aside.

To assemble: Spread half of the beans over each bread half. Place the bread halves cut side up on a baking sheet. Top each half with half of the chorizo. Sprinkle 3/4 cup of cheese over the beans on each half.

Place the baking sheet in the oven and bake for 8-10 minutes, or until the cheese is melted and lightly golden. Top each mollete with crema and pico de gallo. Serve and enjoy!
