Ingredients

Serves 4 servings
  1. 1 bunchgarlic chives
  2. 1 packshimeji mushrooms
  3. 1/5daikon radish
  4. 1/3carrot
  5. 10 1/2 oz (300 g)thinly sliced pork for shabu-shabu
  6. [A]
  7. 1/2 cup (100 ml)Kappo Shirodashi
  8. 3 cups (700 ml)water
  9. 2 tablespoonssesame oil
  10. 1leek (coarsely chopped)
  11. [Ingredients for the Finish]
  12. 2servings Chinese noodles (boiled or pre-cooked)
  13. 3green onions (sliced)
  14. To taste toasted white sesame seeds

Steps

  1. 1

    We will use 'Kappo Shirodashi' this time.

    Cut the garlic chives into 2-inch lengths. Trim the base of the shimeji mushrooms.

  3. 3

    Use a peeler to slice the daikon radish thinly. Julienne the carrot.

  4. 4

    Bring [A] to a boil in an earthenware pot, then add steps 2 and 3 and cook through.

  5. 5

    Add the pork to step 4 and cook briefly, then wrap the vegetables and enjoy.

  6. 6

    [How to Make the Finish] Add the Chinese noodles to the remaining broth and simmer. Garnish with green onions and toasted white sesame seeds.
