Separate the egg yolk into a mixing bowl. Add salt and mayonnaise, and beat together. Add sweetened condensed milk and lemon juice, and beat until combined. Microwave for 15 seconds and set aside.

Roll the kale leaves and slice into long strips.

Heat the oil until hot. Fry the kale until crispy, then set aside to drain the oil.

Rub salt all over the chicken breast. Coat the chicken in tempura flour, dip in egg, and then coat with breadcrumbs.

Heat the oil until hot. Fry the chicken until golden and crispy on both sides, then set aside to drain the oil.

Cut the chicken into bite-sized pieces. Place on the crispy kale and drizzle with the creamy lemon sauce. Ready to serve!
